Homemade Cereal Nut Bar

If you’re one who likes Rice Krispie bars, you’ll dig this recipe for sure! But instead, rice cereal was swapped out for a lower glycemic index bran flake cereal, skim milk powder added and loads of nuts for a more satiating snack. Don’t be fooled, it definitely still falls into a “treat” category. But compared to the “OG” (original) Rice Krispie, it has more fibre and some added protein to keep you full a little longer rather than just a boost of sugar. This isn’t something to be added as an everyday lunch snack, but if you’re headed off for a hike, it’s an easy grab-‘n-go treat for a boost of energy.

Marshmallow All-Bran Nut Bar

Makes 12  servings.
Preparation Time: 5 minutes.
Cook Time: 10 minutes.

Ingredients

  • 400g Marshmallow
  • 100g Butter, non salted
  • 100g Milk powder
  • 300g All-Bran flakes, cereal
  • 300g Nuts and seeds of your choice (i.e. sesame seeds, sunflower seeds, pumpkin seeds, almond slices)
  • 100g Cranberry, dried

Method

  1. Melt marshmallows, butter and milk powder a heatproof bowl on top of a pot of hot water (ie. Double boiler).  Mix while melting until smooth.
  2. In a separate bowl, mix the dry ingredients.
  3. Remove marshmallow mixture from heat and mix dry ingredients in until evenly distributed.
  4. Press down firmly into a parchment-lined baking pan. Leave to cool (approximately 30 minutes). Cut into x squares or bars.
