Gift giving season is here. Amongst the gifts, chocolate sales seem to be off -charts. I walked into the store the other day and it was astonishing how much packaging and processing goes into these celebrations we have. From right to left, there are a boxes of individual-sized chocolate, varying in size, colours, flavours and quantities. But what seems to be the same is the packaging on packaging, tin foil wrapping, hard-plastic casing, cardboard laminate boxes, plastic wrapping…. From halloween to Christmas, to Birthdays to Valentine’s day to Easter and every other celebration in-between. How is it that these celebrations of joy, happiness, peace, bringing of people together became about purchasing plastic?
If you ask me, the gift of time is the best gift of all. Make it a priority to spend time with those you love and care for. Show kindness by giving thought and time into what you would like to gift. So… solution? Find someone to do some gift-preparation together and do something homemade. What better way to get into the festive spirit than playing some Jingle-Bell Rock in the kitchen with someone you love?

Now, what was that we were saying about chocolate? Oh, yes – everyone loves chocolate! I present you: homemade mock ‘Turtles’. What that really means is: a chewy, chocolatey goodness made with crunchy pecans. Instead of caramel, this recipe uses dates and flax for some extra fibre. And packaging? Try something that the gift-receiver can reuse or return (my neighbours and I always end up passing plates around)!

Pecan Filled Chocolates
MAKES: 20 SERVINGS.
PREPARATION TIME: 10 MINUTES.
- 1 heaping cup Dates (if the dates are too hard to work with, soak them in hot water for 5 minutes, and drain before processing)
- 2 Tbsp Ground Flax Seed
- 30-45 Pecan Halves
- 250g Quality Dark Chocolate (70% or more)
- (Optional) A pinch of Sea Salt
- (Optional) 1 tsp Coconut Oil
- Grab a partner to help read out the recipe while the other prepares the ingredients list.
- In a food processor, blend dates until a thick, jam-like consistency paste forms. Add ground flax seed into date paste.
- While the date paste is being prepared, melt chocolate in a heatproof bowl above a pot of water (or a use a double boiler). Using a spatula, mix until all the chocolate has melted. Then remove from heat. If you find the chocolate hardens too quickly to work, adding a teaspoon of coconut oil will slow the hardening of the chocolate.
- Using a small cookie scoop or a spoon, drop a marble-sized amount of date and flax paste onto a lightly greased tray.
- Press 2-3 pecan halves into each mound of date and flax paste.
- Using a clean cookie scoop or spoon, drop the dark chocolate onto each mound until covered.
- Sprinkle a pinch of sea salt as desired.
- Place tray in refrigerator to set until ready to serve.
