To celebrate how far we’ve come in food science, technology and innovation, here’s a quick recipe to invite Spring. Absolutely refreshing, simple and naturally sweetened by our most commonly known variety of banana (currently can be found in most urban groceries for about 60-some cents a pound). If you’re one of those people that tend to have more food wastage than you’d like, feel free to chop a couple of ripe bananas to keep in the freezer for use later before they’re spoiled. Recipe
Makes 4 servings. Preparation time 5 minutes. Total Freezing time 2 hours.
Equipment: Measuring Spoons/Cups, Blender, Spatula, Loaf Baking Pan.
Ingredients
Chunky Monkey Banana Ice Cream
- 3 Bananas or 445g (at 0.65 cents per pound = total of 64 cents)
- 3 Tbsp All Natural, Peanut Butter (at $3.50 for a 750g container = total of 22 cents)
- Optional: 1/2 tsp Vanilla Extract
- Optional: 3 Tbsp Semi-Sweet Chocolate Chips, 3 Tbsp Roasted Peanuts and/or a Pinch of Cinnamon to taste
Banan-erry Ice-Cream
- 3 Bananas or 445g (at 0.65 cents per pound = total of 64 cents)
- 3 Tbsp Greek Yogurt (at $4.99 for 500g = 45 cents)
- 1/2 Cup Mixed Berries, Frozen (at $10 for 2kg = $1.25)
- Optional: 1/2 tsp Vanilla Extract
- Optional: Additional 1/2 Cup of Mixed Berries for Compote
Rough estimated total cost of recipe: Under $3. If you ask me, I think it’s relatively comparable to the products found on shelves in grocery store freezers.
Method
- Cut bananas into small chunks and freeze until solid, at least 1-2 hours.
- Transfer bananas to blender and blitz until smooth and creamy.
- Add remaining ingredients and pulse to stir ingredients until incorporated.
- Pour into loaf baking pan and spread evenly with spatula. Freeze for 1 hour or until solid.
- Top with additional peanut butter and crushed roasted peanuts, or microwave a half cup of frozen berries for 1 minute to make a warm compote sauce to drizzle and serve. Enjoy!
